BBQ Chicken Thighs with Mint Butter Mopping Sauce

Check out this tasty BBQ recipe involving chicken with a mopping sauce of mine that will make your experience a lot more enjoyable… To make your mopping sauce: 3 cloves garlic (diced) 2 tbsp diced ginger 1 handful of mint leaves (chopped) 1 tbsp lemon juice 1 stick of butter (melted) 1 tsp brown sugar 2 tbsp fish sauce 1 tbsp olive oil 1 tsp Chinese rice cooking wine 1 tsp or 1 tbsp (your preference) thai red curry paste 2 tsp ground cumin Combine all ingredients into your food processor and blend nicely. Coat your chicken thighs with olive oil on both sides, then sprinkle liberally with ground black pepper. Pat the pepper into both sides of the chicken well. Place your charcoal in your grill on one side for indirect cooking. When ready to cook, place your chicken thighs directly over the coals skin side down to give them a good sear. Sear for a few minutes or until they reach your desired crispness. Flip them over and sear for a few minutes underneath. When done searing your chicken, move them to the opposite side of the grill for indirect cooking. Mop your chicken on both sides with the mint butter sauce, close and leave to cook for 1, 1 1/2 hours, depending on the temperature of your grill. Come back after 30 minutes, mop the chicken once again with the sauce on both sides. Do this one more time after another 30 minutes. During the last 30 minutes of cooking you also want to sprinkle your chicken with fennel seeds. You can do both sides, I just patted them down on

Marinated BBQ Pork Ribs (One of my variations)

Good BBQ, good drink and some good smoke on a nice Friday night…follow this easy recipe to make yourself some tasty ribs… For your marinade you will need: 2 tbsp soy sauce 3 tbsp fish sauce 2 tbsp brown sugar 1/4 cup mirin 1 8oz can of tomato sauce 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp ground cumin A small handful of star anise (smashed up – optional) Trim up your ribs and remove the membrane. Cut the ribs up into individual pieces and place in a mixing bowl. Add all the marinating ingredients to the bowl and mix well to cover all the rib pieces generously. Marinate for at least 1 hour, the longer the better. Start up your grill with charcoal placed on one side for indirect cooking. Sear the rib pieces for a few minutes directly over the coals to seal in the juices. Before closing the grill, mop the ribs with some sauce from the marinating bowl. Sprinkle fennel seeds generously all over the ribs, and close the lid. These ribs will take about 1 hour to cook, so return after 30 minutes to check on them. After 30 minutes, give the ribs a quick basting with fish sauce. Return 30 minutes later, your ribs are done. Enjoy this tasty BBQ recipe with a glass of wine and some good smoke like we did, I guarantee it will make your weekend a lot more fun and tasty!

Summer BBQ Recipes – Barbecue Cook book

It is time to think about summer BBQ recipes and get ready for summer time barbequing. When barbecuing, it is important to know several things to ensure your party goes flawless.

Many kinds of meats and side dishes are used for barbequing. Generally, folks grill beef, pork, and fish. Look for meats that are packaged and specifically cut for barbecue in your grocery store.

Conventional side dishes include potato salad, beans, and coleslaw. These sides are simple to cook and store until it is time to eat and they work very well with every kind of meat. Your usual condiment bar should have pickles, relish, and onions.

1. For sure, marinating prior to cooking adds flavor. However if you cover your meat in barbecue sauce, it will dry out the meat and may even cause it to burn. What cause this to happen are high quantities of fat and sugar in nearly all barbecue sauces that burn easy. But if you lightly season your meat, that will work well and does not have serious effects.

2. Keep in mind to apply a nonstick spray on the cooking area prior to you begin cooking. It will prevent your meat from sticking when you are rotating or removing it. When your meat sticks and tears, you will lose a large amount of juice, and your meat might dry out.

3. Do not put meat on the grill until the heat is right. The fluctuation in temperatures will cause your food to dry out or burn. If you are using a charcoal grill, make sure that the coals are totally gray prior to putting the meat on the grill.

4. If you sear the meat, it would lock in juices and taste, however do not cook the meat at that high temperature all the time. When you have seared both sides, adjust the temperature to the lower setting. This will guarantee that your meat is full of flavor and tender.

5. Do not poke the meat when it is cooking. Poking holes in meat will cause the juice inside to leak out into the bottom of the grill. This not only will make your meat dry and look bad, but in addition can ruin your grill.

Barbecuing is a widespread and honored tradition. Three out of four american families own a barbecue grill and use it, on average, four to five times per month. What better way is there to have fun with friends and family than to have a barbecue?

Before putting the meat on the barbecue it is a good idea to set it out of the refrigerator for about an hour to let it warm up. This will make the meat cook quicker and it will be juicier.

Food safety is an important issue so always be sure that you cook the meat thoroughly. Cut the meat in the thickest part to be sure that the juices are clear to be sure that it is completely cooked. Always be sure to keep utensils used to handle the raw meat separate from those you use to handle the cooked meat. Cross contamination of bacteria can be as dangerous as eating raw meat. You want your barbecue to be both fun and safe for everyone so always be careful.

Barbecued Spare Ribs are a classic American barbecue meal, made from pork. This version is cooked in the oven, not on a barbecue, and uses a barbecue sauce with a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Remember to give your barbecue a good cleaning after each use. If you have a gas grill, you can turn the grill on for ten or fifteen minutes to allow it self clean. Charcoal grills need to be cleaned with soap and water using a stiff wire brush.

Here are a couple really good barbecue recipes you can try at your next barbecue

Grilled Stuffed Pork Chops

Ingredients:

4 thick rib pork chops, (1″ to 1 1/4″ thick is best)

3/4 cup dry breadcrumbs

Large pinch dried and crumbled rosemary

Large pinch dried and crumbled marjoram

1 Tbsp. melted butter

1/2 cup minced sweet onion

1 small clove garlic, minced

salt and/or pepper to taste

Make several shallow cuts in each pork chop with a knife.

In a large bowl mix the breadcrumbs, herbs, butter, onion, garlic, and salt.

Stuff the mixture into the cuts you made.

Grill the pork chops at medium to high heat for ten minutes on each side side. To make sure the chops are evenly cooked they should be turned several times. Grill them for five minutes or so then turn them over and let that side cook for 5 minutes. Repeat this process two or three times or until the chops are grilled to your satisfaction.

Barbecued Spare Ribs

Here is a classic American barbecue with a twist. This version uses a barbecue sauce that has a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Ingredients:

2 pounds pork spare ribs

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons hoisen sauce

2 tablespoons white vinegar

1 tablespoons sake

2 cloves garlic, minced

1 teaspoon sugar

1/4 teaspoon of freshly ground white pepper

2 tablespoons chicken stock

freshly ground black pepper and salt to taste

Put the spare ribs in a large casserole dish in one layer.

Using a large bowl, combine the rest of the ingredients. Pour this mixture over the spare ribs being sure to completely coat the meat. Let this marinate overnight, baste occasionally unless the meat is completely covered.

Throw the ribs on the grill and let them cook to your satisfaction. Turn them several times during the process and baste them with the marinade sauce a few times.
